 Cauliflower "Popcorn"

I don’t know if I should admit this or not but… I ate a whole head of cauliflower by myself yesterday. I meant for everyone to have it but the boys had Royal Rangers (church Boy Scout type thingie) and I mis-timed making these.  My husband took the boys to church and I was home all by myself with a pan full of roasted cauliflower “popcorn”.  I couldn’t help myself.

You can either eat these raw or roast them up.  Both ways taste great.  I usually end up doing a little of each. The nutritional yeast adds a cheesy flavor without using dairy.

Cauliflower “Popcorn”, Raw or Roasted

Ingredients

  • 1 head cauliflower
  • 2 tbsp olive oil (or melted coconut oil or butter)
  • 1 tbsp nutritional yeast
  • 1/4 tsp garlic powder
  • 1 tsp sea salt

Instructions

  1. Preheat oven (if roasting) on high broil.
  2. Cut cauliflower up into small bite sized pieces and place in a large bowl.
  3. Drizzle oil on top and sprinkle with nutritional yeast, garlic powder and sea salt.
  4. Toss to evenly coat.
  5. Cauliflower can be eaten as is or roasted.
  6. To roast, spread out coated cauliflower on a large cookie sheet.
  7. Roast on the top level for about 7 mins or until beginning to brown.
  8. Remove from oven and turn cauliflower.
  9. Roast for another 7 minutes or until beginning to brown.
