Chocolate Syrup That Might Even Be Good For You!

 Chocolate Syrup

I must make a confession.  I don’t like milk.  Not even the fresh from the farm, straight from the tap milk we go far out of our way to get.  I know it’s good for me so I make myself drink.  I don’t hate milk but I don’t like it either.  Of my kids, all of them but one likes it (2 could live off of milk).

BUT, I love chocolate milk!  And so does my one milk-disliker.  Chocolate milk is a great way to get them to drink milk but oh boy all that sugar?  No thank you.

This syrup is made with half the amount of sugar as you would normally use and replaces it with stevia.  I find that while I don’t like the taste of stevia by itself, if I use it to replace half the sugar in a recipe, no one notices.

  • 1 1/2 cups water
  • 1 1/2 cups sucanat (or your favorite sweetener)
  • 1 1/2 tsp stevia
  • pinch of salt
  • 1 1/2 cups cocoa powder
  • 1 tsp vanilla

  1. In a small saucepan, mix water, sucanat, stevia and salt and bring to a soft boil. Remove from heat and whisk in cocoa powder and vanilla until smooth.
  2. Place in a quart sized mason jar and refrigerate.
  3. Add to milk to taste, about 1 tsp per cup. It mixes well if you place it in a container that you can shake.
