Grilled Pizza

It’s hot!  Not as hot as much of the US but we don’t have air conditioning so 90’s is hot. I do not cook inside at all if I can help it which means we’ve been using the grill a lot.  The boys wanted pizza today so this was my compromise.  I’m quite pleased with how these turned out. They taste so much better than in the oven.  Nice and crispy.  My favorite topping is a bit of curtido added after they are cooked up.

  • Tortilla shells, one per person (gluten free for us)
  • 2-4 tbsp spaghetti sauce per pizza
  • 1/2 cup mozzarella cheese per pizza (I used cheddar for some of them because we ran out)
  • Toppings as desired (try adding sauerkraut after they are cooked)

Turn your grill to its lowest setting.  Make pizzas by spooning spaghetti sauce on each , adding toppings and cheese.  Place pizzas directly on the grill.  I closed the lid to get the cheese to melt before the bottom burned.  These cook very quickly so keep an eye on them.
