"Hearty" Beef Tacos

Eating organic grassfed meat can be spendy, especially feeding 4 growing boys organic grassfed meat.  I have a few tricks up my sleeve to make it less painful.  One way is to use cheaper cuts of meat, like the heart.  We love heart.  Heart after all is a muscle and while it does have a different texture than other cuts of meat that you might be used to, it has a pleasant taste (unlike liver).   My ever picky children gobble it up.

Hearty Tacos

Beef heart is high in phosphorus and B vitamins, particularly B-12. It contains 161% DV of B-12. Heart is also a concentrated source of CoQ10 and grassfed heart is a good source of omega-3’s and CLA. Nutrient dense and cheap. My favorite combo!

Hearty Beef Tacos

  • 2 tbsp butter, coconut oil or lard
  • 1 beef heart, cubed
  • 1 small onion, sliced thin
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin seed
  • 1/4 tsp oregano
  • 1/4 cup stock or water
  • Salt to taste
  • Cayenne pepper to taste

In a large cast iron skillet, heat oil over medium heat.  Add onion and sauté until soft.  Add garlic, cumin and oregano and sauté until fragrant.  Add cubed heart and stock and sauté for about 10 mins or until meat is cooked through and liquid is nearly gone.  Add salt and cayenne pepper to taste.

Serve with corn tortillas and taco fixings or on top of rice
