Indian Spiced Roasted Chickpeas

I saw a recipe for roasted chickpeas recently but couldn’t find it when I was ready to make it.  This one is based off of Cooking Traditional Foods basic recipe Roasted Chickpeas.  I added Indian spices, doubled the recipe (2 cups just won’t last long here) and turned up the heat for a quicker roast.

So good!  My 2 yo was double fisting them into his mouth.  I was worried he might choke on them.  I’ve been looking for a healthy snack to take with us to Taekwondo since we’re usually there all afternoon and over dinner time.  These are going on my list of on the go snacks.

Indian Spiced Roasted Chickpeas

Preheat oven to 425F.  Melt butter.  Place chickpeas in a large bowl and drizzle butter over them.  Sprinkle spices and salt over chickpeas while gently stirring, try not to mash up the chickpeas.  Spread in a single layer on a cookie sheet lined with parchment paper.  I used two sheets.  Place in oven and let roast for about 25-30 mins stirring part way through. Enjoy warm or cold.
